About Us

 

The foundation of Insomniac Cheesecake Shack stems back to the time of major personal lifestyle changes.  We began to phase out all of the foods we had known our whole lives after learning about horrors of factory farms and the environmental/health impacts of GMOs.  Affording real, organic, healthy food was the most challenging in the beginning of our transition. Over time we made food our priority as we learned it is the foundation of a true healthy life. We love health food but the sweet tooth cannot always be satisfied with healthful chocolates, hearty grains, and cane sugar replacements. Carol started making our old recipes with quality organic ingredients like pastured diary/eggs, Himalayan salt, pure vanilla extract, and fresh produce. The organic difference was magnificent!
